We like the mountain Cabernet vineyards best. Their high mineral content rocky soil, low nutrients, and abundant sun grow the best Cabernet. Pasatiempo is high on Sonoma Mountain on the southwest side of the valley. It gets some updraft from Bennett Valley, which moderates the temperature to give it really long hang times; it is often the last vineyard picked. This Meritage style blend, assembled by taste, accentuates the Cabernet by reaching every part of your palate. We barrel age it in our cave for 30 months. We made 350 cases.
